Salad Kabobs

Today being Memorial Day we pay our respects to those who have served and sacrificed for our country. Thank you to those who have and the families who have paid the ultimate price for our freedom. 

As we gather over the weekend to celebrate, it is hard to eat healthy when you are tempted with hamburgers, hot dogs, or in my case bacon wrapped shrimp! Salad is hard to prepare for large groups because not everyone likes the same ingredients and salad toppers. You end up wasting a lot of salad when you prepare it and no one eats it. Making salad a finger food by putting it on a stick makes it easier for it to be consumed. Gives you the ability to provide verity. 

Here is what I used:

Mini buffalo monzerella balls

Fresh cut strawberries 

Green bell pepper (or red if you want more color)

Spring salad mix

Salad dressing of choice (I used balsamic glaze)

The amount you buy of each item will depend on how many you will be making. Plan accordingly. Set dressings in small bowls with a spoon near the kabobs to allow your guests to decide what they want on them. I used a sweet balsamic glaze on mine.
