Vanilla Coconut Overnight Oats

Instant oatmeal out of a packet may be quick and easy, but it also tastes like the package it came from and packed full of chemicals that are used to make the fruit-like-bits added to the package taste like the real thing.  Overnight oats are far more healthy and can easily be thrown together in minutes the night before and ready for you to grab and go in the morning for breakfast.  The dry ingredients can also be bagged and stored in the pantry for future use.  When you are ready to make it, you just add milk to it and let it sit in the refrigerator.

Makes one single serving 

Here is what you will need:

1/2 cup old fashion oats

2 teaspoons chia seeds

10 raisins (more or less, I don’t really count them)

1 teaspoon honey

1/2 teaspoon vanilla

3/4 cup coconut milk

1 Banana for topping

Pour all the ingredients into a container that can be sealed with a lid.  Shake well and place in the refrigerator.  It will take at least 3 hours for the oats to absorb the coconut milk and become soft.  The oats can be eaten cold or heated in the microwave for a minute prior to eating.  I like to warm mine and cut a banana to place on top and eat with it.
