I used to have a huge dependency on heavy cream when making meals for my family. I could easily go through a quart of cream a week. So, if you know me it is a huge deal that I have found a dairy alternative to my previous staple.
Here is what you need:
2 Cups cashews
1 1/2 cup chicken or vegetable broth. * start with 1 cup and slowly add more depending on the desired thickness
That is it!!!!!!
I used my single serve blender cup to soak my cashews. You will pour the broth over the cashews and let them soak for two hours or as long as possible. Warm broth will help the cashews soften faster.
Puréed and roasted red peppers
Tomato paste (make a rose sauce)
(please don’t add all of these at once. I would imagine that would taste rather disgusting)
