Low Carb Banana Pancakes

Really, you only need two ingredients to make these pancakes.  I like a little more flavor, so at times I will add a little cinnamon, powdered peanut butter or almond butter to the batter. I generally don’t have an issue getting my kid to eat pancakes, he absolutely loves these. If I can disguise additional nutrients in something he loves and get him to eat it, that is a HUGE mommy win!  This is a great way to fulfill your desire for hot breakfast without all the added weight of traditional breakfast pancakes.  Good luck trying to avoid eating a whole stack of these! HA!

Here is what you will need:

2 Eggs

1 Large banana (yields 1/3 cup mashed)

2 tsp powdered peanut butter or 1 tsp almond butter *optional

1/8 tsp baking powder * optional for added fluff

1/8 tsp cinnamon *optional

Squish your banana Before pealing it. It makes it easier to make the banana smooth. Unless you enjoy clumps of banana in your pancakes. It is an odd texture issue for my son, so I don’t leave any clumps. Peel your banana and mix with eggs in a bowl. If you choose to add peanut butter powder or almond butter, add it to the eggs mixture along with the cinnamon and baking powder if you so choose.

Mix well and pour over a hot, slightly greased pan. Since these pancakes are so light, if the pan Isn’t greased you will have a hard time flipping them.

Cook until brown on each side and serve with maple syrup or almond butter. Yum!
