Baked Parmesan Potato Wedges

You don’t have to buy a fryer to make deliciously crispy fries.  Baked fries also have less fat, and are a healthier alternative to those soaked in oil to crisp.

Baked Parmesan Cheese Wedges

Ingredients
  

  • 6 Large Yukon Gold Potatoes
  • 3 Tablespoons Oil More may be needed depending on the size of potatoes
  • 1/4 Cup Parmesan cheese Grated
  • 1 Cup Italian Seasoned Panko Bread Crumbs
  • 1/4 Teaspoon Teaspoon Salt
  • 1/4 Cup Diced Parsley Garnish

Instructions
 

  • Wash potatoes to remove dirt. Cut potatoes into wedges or fries. Place the potatoes on a towel to remove excess moisture, then place on a parchment lined baking sheet. Pour the oil over the potatoes, season with salt, and coat with 1/2 cup bread crumbs. Toss the potatoes in the bread crumbs to coat. Evenly space the wedges across the baking sheet, then pour the remaining half cup bread crumbs evenly over the top of the potatoes. Dust with grated parmesan cheese and place in the oven to bake.
  • Bake for 15-20 minutes at 350 degrees until golden brown. Once cooked, remove from the oven and sprinkle the potatoes with diced parsley while they're still warm.
