Halušky Potato Dumplings

Potato dumplings, sauerkraut, sausage, bacon and goat cheese. Topped with sour cream and parsley.

One of our friends had a birthday party yesterday. The instructions in the invitation were very specific to include the request of no “healthy food.” After all, why would you want to munch on carrot sticks and celery on your birthday!?! I agree, it is a day to splurge and enjoy life! So what better food item to bring than halušky, a true Czech comfort food! The only thing missing is a deep fried pork schnitzel (Chicken fried pork cutlet).

If you are not familiar with halušky, maybe you have heard of spätzle? A German egg noodle, traditionally served with gravy and sausage. I would say halušky is spätzle’s close cousin.

Instructions
  1. Mix together your dumpling ingredients. Once mixed, the batter should be stringy. You can purchase a spaetzle grater, food mill, or use a grill sheet pan that has holes in it, the size of a pencil eraser.
  2. Bring a large pot of water to boil. Place your sheet pan or spaetzle grate over a pot of boiling water and pour the batter over the grate, pressing it through the holes. The batter will drop into the pot below, creating the perfect sized noodles.
  3. Let them boil until they begin to float to the surface. Strain the noodles and rinse well with cold water. Let the noodles rest while you prep your sausage and bacon.
  4. When ready, heat your pan with a tablespoon of oil and add the noodles. Stir to prevent noodles from sticking to the pan. As the noodles begin to brown, add the sauerkraut, bacon and sausage. Cook until combined, remove from heat and mix in your cheese.
