A chickpea hummus accompanied by the rich flavor of roasted garlic and carrots. A great starter that will taste so good, it might end up as your meal, when you realize you ate the whole bowl.
Roasted Carrot Hummus
Ingredients
- 15 Ounce Can Chickpeas (Also Known as Garbanzo Beans)
- 2 Whole Carrots Approx. 171g
- 2 Whole Cloves Garlic
- 1 Tablespoon olive oil
- 2 Tablespoons Sesame Oil (Additional for Garnish)
- 1 Tablespoon Tahini
- 3 Tablespoons Fresh Lemon Juice
- 1/2 Teaspoon Salt
Instructions
- Clean or peel the carrots and garlic. Place them in a parchment lined baking dish and coat with a tablespoon of olive oil. Roast them in the oven at a temp of 375 until soft.
- Place the roasted carrots and garlic in a blender along with the remaining ingredients. Blend until smooth.
- Top with a little oil and serve chilled.
