  1. Clean or peel the carrots and garlic. Place them in a parchment lined baking dish and coat with a tablespoon of olive oil. Roast them in the oven at a temp of 375 until soft.
  2. Place the roasted carrots and garlic in a blender along with the remaining ingredients. Blend until smooth.
  3. Top with a little oil and serve chilled.
