Salmon Cakes

Baked salmon combined with fresh chopped parsley, onion, and sweet red peppers. Seasoned with sea salt, garlic, fresh squeezed lemon juice, and pressed into a patty before they’re pan fried. Top with sweet chili sauce and homemade tarter sauce.

  1. To Make the tarter sauce, cut the onion and pickles into 1/2 inch pieces, then place the onion, pickles, mayonnaise and lemon juice in a food processor. Pulse until onions and pickles are diced and uniform in size. Don't over-pulse. Place in the refrigerator and begin prepping the salmon cakes

  1. Dry your parsley with a towel and chop into 1/2 inch pieces. Place the parsley in the food processor, and pulse to chop.
  2. Chop your bell pepper and onion into 1/2 inch pieces and place into the food processor with the chopped parsley.
  3. Pulse until the pepper and onions are chopped uniformly.
  4. Crack an egg and add it to the food processor bowl, along with the Panko, Oil, lemon juice, garlic powder, salt, and baked salmon.
  5. Pulse to combine.
  6. Divide the mixture into 8 equal parts
  7. Press flat, and shape the patty with your hand.
  8. Pan fry on low heat. Keeping the heat low will allow the egg to cook inside without burning the outside of the patty.
  9. Top with fresh tarter sauce, and pair with store-bought sweet chili sauce, for a slight sweetness.

Q&A

 

Can I use bread crumbs instead of Panko?

Yes! Bread crumbs can be used as an alternative to Panko.  Panko acts like a binder and absorbs any additional liquid. Be mindful that you use unseasoned bread crumbs, so that the salmon cakes are not too salty, or over-seasoned.

Can I cook the cakes in an air fryer or oven? 

Yes, they can be cooked in an air fryer, but it is best if you cook them with oil in a pan.  Brush the cake with oil before you place it in the air fryer. The outer surface of the cake will by more dry with using an air fryer or oven.  

Does it matter what size and thickness you make the patties?

Yes, thicker patties with take longer to cook, but will have a nicer crust on the outside.  If you make the patties too thin they will seem dry and less flavorful.  I suggest the mixture be divided into 8 equal sized patties for optimal flavor and moisture.
